You should be able to do it. This is assuming that the secondaries of the two transformers are only used to provide isolated scaled signals to the cFP and are not connected to any other circuitry. If there are other connections to the transformer secondaries, you will need to evaluate the circuit to make sure its ok.
AC Voltage Measurement - Remember to pick an input voltage range suitable for the Peak-Peak value of the AC and not the 10V RMS value.
AC Current Measurement - You will need to use a shunt resistor across the current secondary to generate a voltage that can be measured. The specs for the CT should indicate how big a shunt resistor you can use. ( Also known as burden.) Do NOT run this with the CT secondary open. This can generate potentially dangerous voltages. Again remember that you need to take the Peak-Peak value into consideration when selecting input range.
