Depends. What information do you have on the actual probe? Do you have any documentation on the type of signal it provides? Is it a voltage? If so, then you can use one of the many DAQ devices that NI sells. The link you provided is to the meter, and since you're trying to not use this in the first place, I don't know why you provided the link to that.
