Well what you're wanting to do can definitely be implemented. Pointing the light sensor downward at the ground will provide you with different values based on what color the robot is currently sitting on.
As far as developing this system in LabVIEW, you would need LabVIEW and the NXT Toolkit for LabVIEW, available here:
If you are unfamiliar with LabVIEW in general, I would highly recommend taking at least the LabVIEW Basics course. If you're not interested in going that route, you could reference this site, which contains a good (albeit much less comprehensive) overview of the LabVIEW development environment:

I'm very interrested in your project. I'm not a LABView hero but mayby we can help. I'm also working on a project with the NXT and LABView.
What are the problems your facing now??
