3 dimensions plot

I would like to plot a 3D curve (wavelenght, dBm, intensity). I acquire a 2D array at each current. I would like to keep this array  when my "while loop" starts gain and at the end , plot all the 2D curve function of the current when the "while loop" finished.

Could you post some data and maybe an image of what you expect it to look like.
