The manufacturer of the gages should only be specifying a maximum voltage to put through the bridge (to prevent to much self heating from power dissipation) and not specifying andy particular voltage to use.
The DAQ device will have the resolution needed to read 5V. It is all handled with its internal gain amplifiers.
