I understand "laptop", which I presume means a fairly modern PC, with the usual USB ports.  You provided no information on the "resistive touchscreen", nor on the "microchip PICkit serial analyzer", but together, these two peripherals are presumably outputting data in some form.

At some point, in order to "connect this to LabVIEW" (please note the correct spelling of LabVIEW), you presumably plug something in to your computer, probably through a USB (or other serial) port (as most PCs don't have that many I/O peripherals other than the Display, mouse, and camera).  If you are getting serial data, learn about VISA and how to "talk" to Instruments using VISA protocols.
