I am just getting started in LabVIEW 2011. How do I acquire data in labview from a microcontroller that has 12 channels from 4 electronic accelerometers. How do I analyze this data? I can't find any online resources to help me learn labVIEW and I don't have a the getting started kit because I'm using labVIEW on my school computers. It would be appreciated if someone could direct me to resources or give me a nudge in the right direction.

Go to support.ni.com, click on LabVIEW, and download the Getting Started with LabVIEW document. Read it, do all of the exercises, be sure to do all of the exercises, did I mention you should do all of the exercises? If you have questions about interfacing or DAQmx, there are also excellent tutorials on NI's site.
Is there noone at your University who knows LabVIEW? In my experience, LabVIEW users are happy to serve as mentors, just don't ask them to do your work for you. Also, listen to their suggestions, even if they sound silly (like "Try to keep your Block Diagram on a single screen", or "Try to keep your wires straight, going from left to right").
