One thing is to recognize that LabVIEW is an acronym for "Laboratory Virtual Instrument Engineering Workbench". As such, it is a software platform that enables you to build (workbench) "engineering" "virtual instruments", meaning to quickly assemble circuits, measurement devices, actuators, etc. that you might use to solve an engineering problem ("How do I measure this? How do I control that?") quickly, using software instead of electronic or mechanical devices that you need to assemble with drills, solder, copper wires, etc.
It can, of course, be used as a "system in itself" to solve an engineering question/problem, but can also be used as a "try out the design in Software before committing the system to Hardware" -- it is so much easier to move a knob on the LabVIEW Front Panel than to change its position once you drill the hole in the aluminum chassis.

Every industry/branch of science where a piece of software tells a piece of hardware what to do has Big Names using LabVIEW extensively, and sometimes exclusively, to control it.

Q: What's the application of any programming language?
A: Whatever application you program with that language.
My department uses LabVIEW daily in qualification testing my company's new products during the design cycle. Our manufacturing department uses LabVIEW daily in their automated test equipment (ATE) that verifies every manufactured product is operating to specifications before it is packaged and shipped.
