A data Logger can be defined as: An instrument that logs and/or plots one or more channels of analog or digital data.
The channels might measure any of the following- temperature, relative humidity, light intensity, on/off, open/closed, voltage, pressure and events, etc over time.
You can start from these two examples that i have taken from 'examples' shipped with labview.
First VI does data generation, Data logging and second VI reads this data from the saved file.
Also, open labview -> examples-> go to 'search' tab and key in the words datalogging to get a list of all relevant self explanatory examples.
If you have any doubts after going through all these excercises, do not hesitate to get back and clarify your doubts.
