I have a problem with the Error Bar Plot:
On the front panel there is an error bar plot. At the beginning the object looked like in the picture "before.gif". But without my intervention, it now looks like in the picture "after.gif". I assume that the inner part of the object has shifted to the right. But I have no idea how that happened. Also, I do not know how I can undo it.
You can not move this part with the mouse (which is possible in normal graphs).
Does anyone have any idea?

Have you ever tried to close and reopen the VI? Error bar has a flaw that you cannot manual set the plot area bounds like XY Graph does.

At some times close and reopen helped. But once this false settings have been saved. And now nothing changes if I close and reopen the VI

How did you reach the false setting? Would you mind sharing a VI with that ErrorBar control?

How the wrong state was created, I do not know. There was no observable reason. At some point, the chart looked so wrong, as it is now.
I have attached a VI that shows only the wrong error bar plot. I've removed the code completely. This happened because the VI is part of a larger project and without the other parts is not runnable. If that should be important, I will try to recreate the connection to the plot.

Try to delete your Error Bar Plot and insert a new one from the palette.

With this procedure I get a graphic with the desired state. However, on the one hand it is no explanation for what happened to the original graphic. On the other hand, it is no real solution, because it is a lot of work, all set everything right again (axis labels, appearance of the plots and names etc). And if the problem occurs the next time, everything would be set back.

Your problem is not known yet.
Did you already tried the "delete and reinsert"-solution before and did the problem come back after that?
We are not able to reconstruct the behaviour and so it is impossible to know what happened to your plot.
Please let me know when the problem occures again and report after what actions or settings it will happen.

The saved plot area bounds are right shifted for certain pixels. A possible cause is setting the control size to an extreme small size by "shortcut menu->Properties->Appearance->Size". The code there has bug that fails to check the limitation of the new size. A safe way to change the size is drag the grab handle (8 blue dots around) or set the value from "tool bar->Set width and height".
But the weird thing is even you corrupted the plot area by "shortcut menu->Properties->Appearance->Size". The size would be resorted after close and reopen the VI. Maybe the above is not the real cause. It would be helpful if you could remember how you get the wrong plot area. But now I can only provide you with the fixed control, see the attachment.

What to watch: When I open the VI including the plot, one can see that the plot is displayed first narrow and then "grows" immediately to its normal size. I'm not sure, but I think to remember that the "wrong" state was created in the same way on opening the VI without any user interaction. Unfortunately I can not say exactly how that happened.
In any case, I've only changed the size of the plot with the grab handles, not over the menu.
