That took far too long to figure out - but is something that I did not know about. I agree there is some weirdness in the properties dialog box (but as I'm back in v8.5 I've got no idea whether the same weirdness is true in 2010)
For those feeling like doing the same...
1) Right click the dial and enable text labels.
2) Right click again and go to properties
3) On the Text Label tab enter the text and the corresponding values.
In V8.5 the tab in 3) is greyed out unless step 1) is done. It also tend to reset to sequential values which can screw up any settings next time you edit them.
Just for fun, an example attached, complete with inaccurately applied customisation.
