I don't know of any books about image processing (I don't use it either), but you can try searching Amazon or similar shops. You can also search the very extensive knowledgebase of this site for articles and examples (use the search box on the top of the page). A common general LV book recommended is a book by Gary W. Johnson (I forgot its name).
Another option is to try searching this site and google for LabVIEW tutorials. Here and here are a couple you can start with. You can also contact your local NI office and join one of their courses.
In addition, I suggest you read the LabVIEW style guide and the LabVIEW user manual (Help>>Search the LabVIEW Bookshelf).

This [link removed; list no longer available] is the list of all LabVIEW books. There's one on image processing here. I can't comment on the quality of the book.
