Hello ,
To give you some feedback after a large project i done in the medical field (IEC 62304).
We did this process to make sure that we was compliant to IEC 62304:
1) Unitary Testing
For that part we used UTF (unit test Framework) and we did a unitary test for every VI (about a thousand), and we have some tools that help us to automatically test all VIs in a row and give us an HTML form.
2) Integration testing
We used also UTF for that and we did some tests for every modules, (it was funny to see all buttons pressed for you by the script )
3) Validation testing
We have a team of people playing with the software.
To sum up, sam is right in saying that you will need a lot of paperwork and documentation, i advice you to use some Tools to gain some time as UTF, and also a tool to manage all you requirements (Rectify or DOORS).
As you need to test a LabVIEW application, i really don't recommend the use of TestStand, i don't think it will help you.

Thanks for this information man. And yeah, we are planning on using the Tortoise SVN to handle LabVIEW versioning.
