How to plot one voltage reading against another.

I would like to know how to plot a cyclic voltammogram, which consists of current(y-axis) plotted as a function of potential (x-axis).  A voltage is applied to an electrochemical cell, and the resulting current is measured.  Should both channels be configured as analog inputs? Helllllp!
