I have seen wires with labels in them but can't figgure out how to do it.

do you mean like in the attached picture? If yes, then it's a simple comment with changed color.

double click on the Block diagram to place a free label

usually it is a good idea to place a triangle parenthesis to show data direction (left to right :-p)

move the label over the wire

I like to colour the label to the colour of the wire too
