LabVIEW is a programming language, so your request translates to a simple scaling function.

I will answer the question you asked.  Attached is a VI that will take a input range which at the moment is 0 to 1.8 and it will scale that to a new range which at the moment is 0 to 5.  This could be used with an analog input, and an analog output to create what you want.
