Well, first of all, do you have access to a computer with LabVIEW on it and if so what version (LabVIEW version and whether basic, professional, etc.)! Then, what DAQ hardware is installed? The best answer here is a National Instruments multifunction DAQ card, because there are a lot of examples, in the LabVIEW pull down examples, for their hardware, and a multifunction board may give you the digital I/O and analog I/O capabilities in one card. Now as to what to do with them, well if you have some external hardware, ideally some trainer board, or a protoboard you can build a circuit on, you can then have some digital/analog combination that you can provide the stimulus to (digital level or an analog signal) and measure the resultant.
Give us more info and we will give more "Hints", but as mentioned in other posts over the years, we won't do the bulk of anything we determine is a project (academic or work), just help point you in the right direction.
