Learn LabVIEW

Can you guys suggest a book or manual to get me up to speed with LabVIEW, I
own LabVIEW 8 Full version, but the LabVIEW docks in the box assume a lot of
prior knowledge. I need to start from scratch.

To learn more about LabVIEW, I suggest you try searching this site and google for LabVIEW tutorials. Here and here are a couple you can start with and here are some tutorial videos. You can also contact your local NI office and join one of their courses.
In addition, I suggest you read the LabVIEW style guide and the LabVIEW user manual (Help>>Search the LabVIEW Bookshelf).

I can't say I went through these, but they should help somewhat.

There are some books (like "A software engineering approach to LabVIEW") which you can try and you can probably find them on Amazon.
