The getting started guide and specs for the NI-9218 specifies that for the +/- 16V measurement mode, a 12V excitation voltage is possible with 9-30 VDC supplied to the Vsup terminal. If I need my sensor to have an excitation voltage to be 10V, am I able to configure the excitation to be 10V instead of the 12V in LabVIEW? Or can it only be the 12V?
Ideally I would be using a 24VDC power supply to supply the voltage into Vsup.

12V excitation is for your 12V sensors that output a analog voltage and not for bridge excitation as in load cell.
I presume you're asking about exciting your load cell or bridge sensor with 10V as recommended by the manufacturer
For your bridge application, it supports only 2V or 3.3V excitation,

Use NI-9237 for 10V excitation.

I am wanting to use a string pot, which requires 10V excitation instead of 12. The bridge measurement mode or 9237 would not work for a string pot as far as I am aware.

Please share the datasheet of the string pot.
This spring pot seem to support 12V as supply for 0-10V output.
