AMC motor controllers implement CANOpen (over CAN) as well as over rs232 (DPCANTR-060B080 CANopen servo drive). Is it possible to leverage the NI-Industrial Communications for CANopen Download - NI over rs232 instead of CAN?

No, NI-IndComm for CANopen only supports NI PXI-8531 and NI-9881. No other hardware is supported.
