I will be purchasing about 20 honeywell pressure sensors, and hope to buy a data acquisition system from NI to capture the pressure data measured. Ideally, I would like to buy a 10+ channel datalogger so this many pressure sensors can collect data simultaneously. I would like to talk with someone who will be able to suggest the necessary NI hardware and software for my application.

it depends on what resolution you need, speed, simultaneously or not and,after all, the amount of money you can spend on.
I don't know these sensors but they are typically 20 mA out DC voltage out. Take a look at compact daq, I have had good experience with this... connects directly to usb, uses labview, etc...this might be a solution

I recommend contacting a technical sales representative - (888) 280-7645 for guidance. This will enable you to discuss your application thoroughly to ensure all of your needs are met. You will need the specifications for your sensors. Many pressure sensors that I have seen are ratio metric and bridge based and need excitation. Will you provide the excitation? If the sensors output voltage, then a multifunction data acquisition card may meet your needs but you want the lowest range possible. These are all things that must be taken into consideration for recommending a system. Hopefully this helps!
