I appreciate the response. For now we are using this as a quick and rapid way to test a prototype. We are planning to move away from LabVIEW after we confirm that everything is working as intended. Had we decided to continue to use LabVIEW, I completely agree with you. Nevertheless, I will still read up on tutorials and best LabVIEW practices for next time.

In my experience, prototypes are almost always morphed into the actual product. If you don't have a good architecture now, it will never have a chance for correction.
