3 digital pumps– probably with DB15 connections or some other DB configuration (9)
19 solenoid shut-offs
I am not sure the hardware that is needed. We currently have a Mac and the Labview software. But it is understood that we may have to purchase a PC if that is easier.

You have not given enough information to really define your needs.
The connector is largely irrelevant. What voltage, current, power, and information is required to be sent to the "digital pumps" and solenoids?
How fast are updates required? How many devices will change simultaneously? If the changes occur a few milliseconds apart is that still "simultaneous" enough for electromechanical devices like pumps and solenoids?
Will your system also have inputs from sensors?
You may be able to do it with a Mac. The hardware input and output choices are somewhat more limited than on Windows, so it depends on the answers to the questions above.

Obviously as you can tell I am new to this. But this is what I have found:
The Pumps connect with a DB15 or 25 they are spec to 0-20 mA and 0-10V http://www.masterflex.com/catalog/product_view.asp?sku=0752380.
The Solenoid Pinch Valves that we have looked at should be something like this link http://www.acroassociates.com/productsSolSVM.html#
There needs to be some flexibility in this because it is still in design phase.
So it has range of 7-70W.
At most there the two pumps will be running and all solenoids.

You can get 0-10 V from an Analog Output from a variety of data acquisition devices. Many of the devices have two outputs, so you will need to look for one with three outputs or consider two devices.
The solenoid valves will require an amplifier or switch and a power source in addition to a digital output from the computer. Something like the ULN200x series of ICs might be suitable as switches.
Using two USB-6008 or 6009 devices from NI might be suitable. Each has two analog outputs and 12 digital output lines. They can be used with the Mac.
