You've probably been messing around with your executable build. The shortcut will disappear if the executable that it is trying to place is missing.
You haven't given much information, so we can only speculate. If the above doesn't help, then try to pin-point when the actual shortcut goes away. It's not just disappearing randomly, there's something that you're doing that may cause it.
