First there are many missing subVis. Please save all in a library (.llb)...

Second, your main vi is a mess. I think nobody will understand what your are doing there. Please have a look at the Development guidelines...

I can't read your VI. Can you post another copy saved for 7.0 ?

I now made a 7.0 version of the main VI: The other one is in the first attachement as a jpg. I know that a lot of VIs are missing, but if I would add all of them the file would be too big. I also know that the VI looks very noobish. Like I said it is my first try and in the beginning it looked quite ok, but then it got bigger and bigger and now it's very hard to change.

Sorry, but I can't do nothing without at least the subvi that exhibits the problem.
After all the delay in responsiveness is after the panel is open (correct ?).
Furthermore the subvi should not be the same posted in the first instance, as you should have modified it based on our suggestions.
Finally, can you give us just a rough idea about the size of the subvi input data?
