You kind of lost me on that one. You want to connect a GPIB device to a PC using Bluetooth? Never heard of that, though apparently somebody proposed it. Don't know of any devices on the market, though. I think you'll find the USB <--> GPIB method to be easier to use and more available. NI has such an interface: https://www.ni.com/en-us/shop/model/gpib-usb-hs.html. There are others on the market.

If it is wireless you are after, granted it's a stretch but you could use a GPIB-ENET/1000 ethernet to GPIB controler with a wireless router.

I don't believe bluetooth can push data as fast as GPIB can, so there's going to be some latency in that link. WiFi's probably a better option there.
There are Bluetooth-to-RS232 modules out there, if the instrument has an RS232 (serial) connection.
