Which DAQ card do you have available?

I doubt you can find the position of the encoders without an additional z channel.

For more info you might start with a search on "encoder" on the Technical Resource page from NI.

It seems that you need to measure speed, direction and position from an encoder with the counters of your DAQ board.
There are already a lot of examples for LabVIEW available. Launch the Example Finder (from Help menu in LabVIEW) and search examples in the "Hardware I/O" directory". You will find some standard examples.
