i don't have clue where to start  In which case this is probably "over your head".  Look for a different pressure transducer, one that doesn't use I-squared-c for digital communication, but uses an analog voltage output.  You'll want to have a good understanding of LabVIEW programming -- I'm guessing that you have no LabVIEW experience, so be prepared to spend some (serious) time learning.
