simple question regarding ROI's

This is rather simple so it is embarrassing to ask but I have been trying to find the answer elsewhere and have been unsuccessful...

I have an image in the shape of a rectangle that I wish to focus only the middle portion(also in the shape of a rectangle).

which ROI function do I use?

There are no embarrasing questions.  Except maybe this one.  Just kidding (I didn't know the answer of off the top of my head.).

I would use the IMAQ Extract function.  This will allow you to create a new image from your original Image, containining only the regoin you are interested in.
