Yes, the input range of the USB 6008 should be sufficient to accept that sensor.

The Labview for everyone book is great. There is another one in the same series called the Labview Style guide, which is also good.

The NI Core 1,2,3 courses are also good (If you have the funds). I think they are running online training now too.
