Point of information for those who would like such....after about 10 days of testing.
Windows Server 2008 Standard x64 running Hyper-V:
The bad......Do not install Lookout 6.1....it will break Hyper-V
The good....Install Labview 8.5 and 8.5 DSC first, then follow up with Lookout 6.1 install, and everything will be OK.
Not everything works (SQL application log errors, 3- lookout related service errors, etc), However, As a display client anyway (or as a DSC LabVIEW client), thinks work quite well.
Even on 32-bit Vista SP1, there are now SQL errors on boot, but I don't see signs of excessive CPU usage so I'm not sure what the consequences of those errors are. I have not run the SQLexec or done remote queries, so they may have problems
VistaSP1 and W2k8 no longer support service interactions with the desktop. Although the event logs indicate those violations when Lookout and/or LabVIEW are installed, things don't seem to be bothered by those errors either....
Summary:
I can run Lookout sever processes quite nicely on Virtual Machines under Hyper-V (stick with 32-bit guests though, until Ryan and company get Lookout 64-bit ready as promised

Then the display clients can run on the 64-bit Windows 2008 Server, on new hardware, with "Vista" drivers (video, touch monitors...etc).
So Ryan,
When you fix up Lookout to match or better the 8.5 DSC engine install, don't forget to get that 64-bit fully squared away!
