LabVIEW does not have any tools specifically designed for stereoscopic depth measurements. You would need to create them from the tools provided in the vision toolkit.
There are other effective ways to measure depth that only use a single camera and would be relatively easy using LabVIEW. One possibility is using a laser line to create a profile, then taking a picture from an angle.
