Let's go back a little bit,
I was asking not how to do that, but if anyone done or tried to do that in LabVIEW (over .NET, Win API, AVIfill and such...).
Streaming to file can be done in any IDE. How much programming and how complex it might look in LabVIEW, that is other aspect and we can talk about it later. But so far, I've seen plenty examples from MSDN and SourceForge and not a single one was looking as simple bolt-on. All of them require appropriate time to program and debug, and at the end what would be the point to use NI Vision when you can do every aspect of capturing and streaming in native .net or C IDE.
