I am looking for a low-cost way to measure 0-30mV, and it looks like a NI USB-TC01 might be able to do this. Can you set these up as standard AI lines? Or can you only set them up to read temperatures.

I don't have one right now, so I can't say for sure, but I'm pretty sure you can do this.
It shows up just like any normal m-series DAQ device in MAX under devices and interfaces. You can then create a virtual channel like you normally would to take an analog measurement off a thermocouple. But I'm pretty sure you can just choose to take an analog voltage measurement off of the same channel.
