Yes you can do it. The problem is that it will take you a lot of work to do it.
Since it is not a device we design to take in this type of measurements, you will have to do all manually. NI's software does not support strain measurements for this USB device, so as scaling and excitation will have to be done manually by you.
Also you will require a BNC adapter to connect the strain gauge. You will have to build the bridge depending if it is a full bridge strain gage, half or quarter. With the output channel you can provide the excitation to the Strain Gauge.
We recommend getting a Bridge/Strain Measurement Device for this type of measurements since it will be much simplier for you. An alternative for USB measurements is the NI 9237 Module: https://www.ni.com/en-us/shop/model/ni-9237.html.
