There is an existing discussion on this where a simple method is suggested for a LDR is shown using a variable resistor component.

Another approach if you wanted a more realistic response (light to resistance), would be to use a Voltage Controlled Resistor and create a LabVIEW VI that would be able to calculate the required LUX to Voltage conversion needed to make this a nonlinear resistive controlled device.   Alternatively you can use a PWL (piece wise linear) function and import the calculations from a spreadsheet (however this would step you through values and not give you immediate control on the output).
