Once you place a copper polygon (area), just select it or double-click on it to get its properties window, on the properties window look for the tab named Copper Area, and on the first window you can have it attach to a specific net that you decide.
To split it, just go to Design >> Polygon Splitter.

No, actually I am using v10. Now that you mention the Polygon tab I know what you are talking about. Select your polygon, and then go to Design >> Shape to Area. Then try again what I said before. You should see it now.
When you create a Copper Area, you should use Place >> Copper Area. I believe you used Place >> Shape >> Polygon. Its just a misconception, the first one is used directly to create copper areas, the second one is used to directly create drawings, like Silkscreen for example, or actually, just a copper 'shape' with no net assignment. If you want it to become an 'area' for which you could use a net assignment, then use that function that I mention at the top of this post.
Polygon splitter only will work for Copper Areas, not shapes. So now that you change the shape to an area you should be able to split it.
So, I will summarize two requests for the software from this post:
1. Either integrate polygon shapes and areas into one function or make it more descriptive for users.
2. Polygon splitter should also be available for Shapes and not only for Areas.
