I'm using two perpendicular strain gauges on one side of each cantilever beam of an assembly, The beams are at each of the 4 corners. How should the 8 gauges be connected to wheatstone bridges? two to a wheatstone bridge, so have 4 bridges? Can there be a simpler solution? say 2 bridges or one bridge? What will the circuit look like.? Can the output go to the A/D of an Arduino?

It really depends on what you are trying to measure. You could connect all the strain gauges into one bridge but depending on how it was wired and how the beams move, you might get cancellation rather than enhancement. Does the assembly twist, rotate, or otherwise move in any way which has different beams moving different amounts?
