Hi Joel,
Thanks for posting. You could log your data using either LabVIEW or VI Logger. If using VI Logger, the following screenshot from the help file explains how to log data:
If you are using LabVIEW, you can use the Write to Spreadsheet File function (or a number of other functions depending on your preference).
If you are using the DAQmx driver, a third option would be to download SignalExpress. The LE edition is free, and provides the basic functionality that you need to log your data to a file. The SignalExpress download comes with a 30-day trial of the full version--it should be fairly intuitive to get started, but don't hesitate to post on the SignalExpress forums if you have any questions.
