It is hard to tell without seeng the "spurious" data.
The way the open thermocouple detection works on the SCXI-1303 is that they connect resistors from AI+ to +5 V and from AI- to ground. When a thermocouple opens it forces a full scale DC voltage on that channel which is easily detected. They use 1E7 ohm resistors.
