Fluctuating readings can happen for a variety of reasons. Check your signal connections: use short, shielded wires where possible to avoid noise. Also, make sure that your signals are properly grounded.
About how long does it take for the signal to start fluctuating? How large are the fluctuations. What is your end application? Generally, the 1520 module was made for strain gauges and other force measurements.
