can I use it for piezoresistive accelerometers

If the piezoresistive accelerometers just give a mV reading and don't require excitation, then it should work.

Are the accelerometers ground-referenced or floating? If the shield of the signal line from the transducer connects either directly or indirectly to earth ground (usually through the metal housing of the transducer), you will want to configure the SCXI-1530/1531 channel with ground referencing turned off. You can perform this configuration in MAX.

If the sensor is ground-referenced and you've configured the 1530 for ground-referencing turned on then you could run-into ground loops that could cause some problems.
