We are attempting to collect real time data using a DAQ board in LabVIEW. We need to determine what specific program functions to use in order to do so. Are there any sample programs that are available for reference?

Yes - From within LabVIEW, Help>Find Examples, and search DAQmx - there are lots of examples available there.
