Is it possible that you are railing the actual voltage range of your analog input card? 113.44mmHg would be close to where I would expect a DAQ designed for ±2v to rail based upon your scale.

We are using the NI myDAQ, which to my understanding is +5V DC supply only, so no range. I also beleive the myDAQ power consumption limit is roughly about 500mW. Additionally, my team and I are using Honeywell Pressure sensors (2) to sample data in a tank we've been constructing at different pressure taps at different locations (manual for specs: http://www.mouser.com/ds/2/187/honeywell-sensing-trustability-hsc-series-high-acc-708740.pdf).
We're not entirely sure why, but somewhere along the line, the signal now caps at the 113.44. However, if we run older versions of the diagram it appears not to cap. I'm not entirely sure where in the code is the issue.

This does appear to be an issue with exceeding the full scale voltage. The myDAQ has a selectable input voltage range (either ±2V or ±10V). See http://www.ni.com/pdf/manuals/373061f.pdf for details.
I think you need to expressly set the min and max limits of the scaled values. 618mmHg, and -682mmHg should be correct for a ±10V scale.
