What exactly is your problem with setting number of samples? There's an input on the DAQ Assistant for this so all you have to do is connect a control to it.
Yes, there are ways to write to a database or Excel spreadsheet. Without any additional toolkits, you can write to a tab or comma separated text file that Excel can read. Write to Measurement File would seem to be your first choice if you are using the DAQ Assistant and Express VIs and don't want to do much programming.
