"Value" refers to the datatype value of the control, which is different than other characteristics of the control. It might be useful to have new datatypes that were (as Darin mentioned) a more dynamic way of having a set of something than an enum. But I'm not sure there is all that much value to extending "default value" to all characteristics, given that there is already a ctrl-Z undo system and the ability to revert VIs. What use cases do you see?
