There is a pretty good tutorial shipped with LabVIEW.
Fire up LabVIEW, go to the 'Help' menu and select "Search the LabVIEW Bookshelf". This will open a PDF that actually lists all the documentation that ships with LabVIEW and all related modules. There's even a search function so you find what you're looking for. Anyway, look for a link on the page titled, "Getting started with LabVIEW". This is the tutorial and will go through all the basics you need to know to get you started.
Keep this "Bookshelf" in mind and use it. It's full of all sorts of good information.
