How can I do triggered DAQ at frequencies higher than 1kHz using LV 5.1?

I'm building a 3D two photon fluorescence microscope. I would like to do the data aquisition and processing in LabView and Matlab. Because of the high number of points scanned the time spent on each point should be as short as possible (sub-milisecond).
Two axis are controlled with a Newport ESP300 Motion Controller, The fast axis is scanned with a GSI Lumonics Galvometer.
The fast part of the system commands and reads position of the galvometer. The timing should be somehow triggered because of triggered intensity data.

When you say "triggered DAQ at frequencies..." do you mean that the DAQ card should get a trigger signal and begin scanning at 2KS/sec or do you mean the DAQ card should read one sample every trigger, where triggers come at 2KHz?
