Unfortunately I am not familiar with Matlab's Psychtoolbox nor the concept of a drifting sinusoidal grating. If you can provide some kind of description of what it is that you would like to see, we might be able to suggest the best way to accomplish this application in LabVIEW.
That being said, you may be interested in taking a look at the
3D picture control feature in LabVIEW 8.20. This can be used to model and manipulate three-dimensional objects in your LabVIEW application. Please post back if this is what you are looking for or if we can provide any further assistance. Thanks,
