I don't know abount any good downloadable books, but in terms of hardcopy works the choice is easy--anything by Gary Johnson.

Have a look at the Learning Center of the LabVIEW Zone and check the links under both Fundamentals and Advanced. Besides some on-line references, you'll also find links to books including Gary Johnson's that Mike mentions.
